When I send a calendar item from a Public calendar, it is including a
reminder to the invitees even though it is unchecked in the calendar item and
unchecked as a default in my preferences. I have Outlook 2003 and they have
Outlook 2007.

What version of Exchange? If 2007, it might be this:
