How to block access File server to one of network computers?

we plan set Linux-based network file File server to our small LAN
network(all on win xp homel), that should allow networked computers to share
files at their discretion, and back up files on a regular basis. It is Intel
Server Chassic, 'rack' SR120, include E-mail server, Web server, Fire-Ware,
File server. What is 'questionable' and probably wrong is that company owner
plan use it 'all-in-one': except file server, want use Web server and Email
server. This is not secure, since sensitive data will be stored on same
server that will work also as Web-server and will connected to internet all
the time. Moreover, seller plan configure this server remotely.
What is way to block access of a File server to one of network PC? (from PC)
