Best Practices for security on file uploads in a form

I have made a site with a page that currently has a form and the results are
emailed. The page is http://goapple.com/order_form.htm built with FP2003
and is running on a server with IIS and FPSE

If I want to add a file attachment field to the form, with the attachments
being stored in a folder on our server, are we opening ourselves up to
security problems?

What are the best practices I should follow?
