Best display resolution options

Some sites use 100% page width so the page fills the whole screen no matter
what the resolution. However alot of sites use 800 pixel width so the page is
either in the middle of the screen or to the left when viewing in 1024x768 or
higher.
Why is this and what is best?

The majority ( 90% ) of monitors are set to either 800 by 600 or 1024 by 768 resolution. Therefore
most people design for these 2 resolution settings

Monitor resolution and use browser screens are not the same,
- more users of larger monitors now have more than the browser open on their desktop
IMHO stick w/ 800x600
