backup via external firewire/mirrored

i want to use 2 Firewire HDDs (e.g. the Maxtor 5000 i
just bought, plus a 2nd one i'll buy this week) to then
be a mirrored backup for my DV files. That is, i'll
tranfer movies from tape onto the new monster Maxtor (250
gig), and allow the 2nd new drive to mirror the first

BUT; in reading Microsoft faqs, it looks like I cannot
use mirrored drives accomplish a key objective; be able
to take my drives to another computer off into the future

Anyone know my best solution?
