Of course you fail to mention what backup app you are using or how you go
about restoring, but the problems you see that require the usb stick to be
plugged in would generally mean that you are connecting to the pst located
on the usb, or that your backup app is 'looking for' the usb stick.
As repeated often enough, with OL closed, you simply copy the pst(s) from
whence to where
PS The MS OL backup addin, merely creates a copy of the pst(s)
