I've notice that when I change my browser settings to 'large text', I get
gaps in my website where I have cell borders and corners. Is there any way
of overcoming this?

Yes, but it will take study and practice to do so. Designing a page layout
with tables renders your design quite susceptible to such things. Designing
a page layout with LAYERS means that you are guaranteed to experience such
things. Designing a page layout with CSS means that you can avoid them, for
the most part.

Learning how to use CSS for layout is not something that one can do
overnight. Plan on getting a good book (any by Eric Meyers) and spending
some time with it.
