I had a similar problem for a client some years ago. If I remember
correctly, I was able to fix it by going to the particular printer's setup
via the control panel, where I was able to select the correct default paper
size.
One other time, I had to create a new 'form' to allow a printer to print on
continuous label stock (of odd size, e.g. 1" by 4"). Again, trying to think
back, I believe that I did this by File...Server Properties from the
"Printers and Faxes" window accessed via Control Panel. From there, you can
define a new custom paper size. (that's in case 8.5 x 11 doesn't show up for
option #1, above)
