In a Word 03 doc, automatically updated text (such as a date) or a hyperlink
to an Internet or network address have had a normal appearance, but with a
gray box (text) or blue underline (hyperlink).

A few days ago, the appearance changed to the formatting rules. An example:

old way: February 21, 2008
now: { DATE\@ "MMMM d, yyyy" }

When I print to paper or .pdf, the date prints appropriately, but I would
like to have it appear that way on my monitor.

Thanks in advance for any help!

Press Alt+F9 to toggle the display from field codes (what you're seeing) to
field results.
