Is there a way to automatically have my name/email address appear in the cc:
field of all my outbound messages? I understand that the Sent folder keeps
copies of all my outbound messages, but I have reasons for wanting to be cc'd
on all messages that I send out. Thanks for your help!

You could make a Rule that CCs yourself for every message that you send.

Tools | Rules Wizard | New Rule | start from a blank rule | check messages
after sending - that will get you started.

I hope this helps you at least a little bit!
