Hi,

I use Outlook 2007 for 3 different Email addresses. Is there anyway I can
link my contact to the Email, i.e. if i was to sent an email using an office
contact the Email address will default to my office Email, and if the contact
was from my personal contacts folder it would default to my personal email
address?

No, you cannot link contacts to email accounts.
