The easiest way to reuse headers and footers is to add the ones that you
want to a file and then save it as a Word template. Then you will get the
desired headers and footers each time you create a document based on that
template. For more on templates, see

If you are using Word 2007 there is another possibility: you can create a
pair of building blocks, one for the Headers and one for the Footers
gallery, which can then be inserted via the Insert ribbon tab.

If you want to do this via the user interface, you will have to make use of
copy and paste. It will be fairly straightforward, assuming that you are
working with relatively few documents.
