I have auto-responder that will respond to certain keywords in the subject
line from my customers, I like to if there is a way to add a certain field
from their email which is always in the same format, to the subject line of
the auto-responder or the body of the email.

The functionality of the Auto-responder is determined by the Authors of the
Auto-responder, not Outlook.
Perhaps you should be contacting them. - I'm sure that if they think it
financially viable they can code something up as the message data is
accessible programmatically.
