I have one contact that for the life of me I cannot get to confirm to me that
my emails have been received. These emails usually containt instructions on
actions I need taken care of. Is there any way to set up an email so that
as soon as the person opens the email, an auto response is sent back to me so
that I know this person received and opened it? This would be extremely
helpful. Please let me know ASAP as this is becoming a real troublesome
issue with this person/company.

You can request a read receipt but it potentially may not work. Newer
versions of Outlook (2002 & up I believe) allow you to deny a read receipt
being returned. Also, many servers won't process read receipts anymore. You
can request a delivery receipt but that only confirms it was delivered to the
email address you specified (it doesn't mean it was read or that it went to
the address you intended it to go to).

There is no way you can force them to do it - unless you have control over
their job and can fire them if they don't comply.

If you want to try it, a read receipt can be requested this way:

Open a new email
Click on the Options button
Check "Request a read receipt for this message"
Click Close

This may or may not work, for the reasons mentioned.
