Is there any way that you can create an auto greeting for your new emails?
Ideally, you would enter a contact in the "To" field and it would auto-fill
"Dear <Contact FirstName>" in the body of the email. Is this possible?

That is not a native Outlook option but can be achieved by an addin;
http://addins.howto-outlook.com/dsd_bellsandwhistles

From the description;
"Save time on Outlook email replies by automatically adding smart reply
greetings and email signatures."
