How to audit a single user???

Is there a way to log everything that a single user on the
domain is doing??? If now with windows, is there a
utility?? Any help is MUCH appreciated

There really is no way to do this. Many things are or are
not auditied, as you likely have noticed in the security
auditing policies. Now, you can audit the use of the NTFS
filesystem and its files on a per account basis - but this gets
you only part way to what you have asked for. The other part
you will need to audit for all accounts.
