Audit of file access

Hi, is it possible to create a log of all files that are
being accessed by which users on Windows 2000 server share?

It appears that whole directories or files are being moved
randomly throughout the share from time to time and, as
usual, "nobody here did that!"

If anyone can let me know of a way to track what is going
on that would be a great help.
