Can I specifiy a default folder that Outlook will access every time I want to
insert an attachment?

It usually opens to Documents, you want it to open elsewhere?

Yes, for some versions.

see http://www.outlook-tips.net/p/XPplaces_bar.htm for one method - this puts the folder on the places bar so you can easily access it from other applications too.

There is a reg hack for some versions of outlook, but it can be a bit buggy.
