During the installation, program ask to associate(or not) it with the .iso
file extension. How to re-associate .iso file extension in case I decide
further uninstall that program? I have also Nero installed (standard
installation), does it have priority with .iso file association?

Regards.

You can manage File Assicaitions using [Control Panel > Folder Options > File
types tab]

But default, I have WinRAR associated with an .iso files type. Is there any
sense associate ISO creator program with .iso files?

The default association only means that when you double-click on a file,
the default program will open. There is nothing preventing you from
working with .iso files in numerous programs as long as those programs
support the format.
