There is no GPO setting that will change the drive letter of a machine.
However, if your servers happen to be Windows Server 2003 you might consider
the use of this WMI Script from the script center.
Change the Drive Letter of a Volume

NOTE: This script will not work on Windows 2000, or XP.
For these machines you can remotely connect to each machine using
compmgmt.msc and change the Drive Letter in Disk Management.
