Is there a way to configure Outlook 2003 to assign a category to a meesage
from a drop down list instead of having to go into options -->Categories?

Right click the message and choose Categorize...

We've been doing that but is there a way to categorize a message being sent?

Nope, the Categories function is mainly intended for personal use which is
why it is less accessible when composing messages.

Thanks. Would this be something 'better' available in the Office 2007 suite?

No, in fact, its personal nature is even more stressed there with the
revamped Color Categories. The options (also GPO-based and on an Exchange
2007) to strip categories for mail received mail are even recommend.

In addition to Roady's comments, if you want to have your copy in Sent Items
Categorised to help with your data storage and retrieval, try using Rules
that apply to emails after sending. EG If the email contains "MVP" put it
in the MVP Stuff Category. I find this useful for filing.

The new feature of the Category Manager, called Quick-Cats, makes it very
easy to assign any categories. With filtered lists of categories it's really
fast.
