archiving your bosses email from your computer

My boss has given me delegation for her inbox, calendar,
tasks etc. She would like me to access her inbox when she
is away and create personal folders from my computer that
she can also see. She gets so much email on a daily basis
that she wants the emails to be set up in personal folders
on the server. Because she has over 2000 emails in her
inbox, she needs these emails moved so that there is more
space. Right now I have set up personal folders but they
are not adding any more space for the inbox.

How can I create personal folders for her emails, from my
computer, that she can also have access too?
