Archive Tasks for space

How do I archive tasks so that I can get them off of the server but be able
to retrieve them later like a pst folder?

In the same way as you are archiving your messages.

I did create a pst folder but when I copied them over but it put all the
tasks into one email. I thought that maybe there was a way to have them show
in the new folder like they show on the exchange side.

You need to create a Task folder instead of a mail folder to put them in;
File-> New Folder
