How can I archive my sent items folder and keep it sorted by the sent to
names? When I move items to the archive folder they all appear as sent from
me which is not very helpful if I want to refer back to the folder. Is this
possible?

Just change the view on the folder to "Sent To". (For example, if running
Outlook 2003, the option would be View > Arrange By > Current View > Sent
To.)
