I upgraded someone's machine and used roaming profiles to get all the
personal settings they had before, including Exchange.

Everything appeared to work fine until I remembered to set the Archive for
the account (ya know, create an archive file in the individual's Documents
and Settings folder). I told it to archive the account and all subfolders
BUT forgot to tell it to put it into an Archive file, resulting in all old
files being deleted.

Any way of retrieving them?

You either set them to be deleted or to be archived
If you did ask to delete them, they're gone for good
If you set it up to move to the archive file (even if you didn't create one)
they will be in the default archive file in c:\documents and
settings\username\application data\microsoft\outlook\archive.pst
