I have the standard Inbox folder plus about 20-30 other message
folders where I store messages by subject.

Is there any way that I can set up a custom View and apply it to ALL
message folders in such a way that if I change that View (add or
delete fields, change field width or order, etc.), all Views will be
affected?

Modify the view that those folders are using and they'll change. An example
of the techniques can be found here:

That looks like exactly what I need. It sounds like I need to proceed
cautiously, so I'll wait until I have some free time to spend.
