on the to -do bar you can show your upcoming appointments, you have the
option to turn this feature on and off and to have a certain amount of
appointments, however, I find it takes up a lot of space. I like the idea
that it shows appointments but I was wondering if there was a way to display
just 1 line, currently it it approx 3 lines of space.

No, you can't change that.
Line 1: Meeting subject
Line 2: Time
Line 3: Location; organizer
