I wouldn't object to the current routine of clicking the sound icon,
then clicking inside the resulting pop-up box, except that it takes so
long for the box to appear. Sound-on and sound-off are so fundamental
that it feels as though there should be something instantaneous. Is
this one of those situations where I've missed the obvious, she asked
hopefully? (It's a bit awkward to use the control on the speakers.)

If you're in the market for a new keyboard, get a multimedia one with volume
control and a mute button.

The multimedia keyboard suggestion is the way to go.
Before I replaced all my keyboards with MM, I used to use this as a
reasonably easy access to Mute On/Mute Off and many other items.

It is not possible to do a "one-click" mute with the mouse, unless you
have your sound application (such as WMP or iTunes) open on the
Desktop with the "Mute" control showing.

It is gonna take at LEAST two clicks using software provided with the
OS.
