using pp 2003, after I display a bullet using animation, I want the next
animation to highlight just one word in the bullet. When select the word
and then go to Custom Animation/Add Effect/Emphasis/change font color, the
animation is applied to all the text in the bullet and not the word I
selected.

How can I do this?

You would have to create that text in a separate text box. PPT doesn't have
"per word" animations.
