I know there is another way to changed the blue or yellow color to black, I
just can't remember how? Can someone please help me?

If you've got other Office 2007 apps installed, just open one of them, click
on the Office "Orb", the click on the Options button near the lower
right-hand corner of the resulting dialog. On the "Popular" settings section
you should see a Color Scheme drop-down that lets you choose among blue,
silver, and black.

Is that what you wanted?
