Is there anyway to turn off the Alt + Enter command that brings up the
control source box. I have a form that to enter a new record you can use
Alt+A. sometimes when typing alot of entries fast knowing you have to hit
enter after Alt+A to get to the right field, it brings up the control form
and we are
accidentally entering info into that. I'm worried someone is going to be
doing that and save it by accident.

Any suggestions?

Set the form's Allow Design Changes to "Design View Only" should do it.
