Is there any way to set up Advanced find so that I don't have to
immediately adjust the columns to read the complete date of the found
messages?

Depends. In earlier versions of Outlook you could save a search from
Advanced Find and when you reloaded that saved search, the view settings were
preserved also (at least that's how it seemed to work for me). However, in
Outlook 2007 and the latest service pack for Outlook 2003, you can no longer
save searches through Advanced Find.
