My sent message always have my own name at the top caption, making it very
difficult to locate my sent message to the addresse. How can I set the
addresse to appear in the top caption line?

Try resetting the view. If that fails, make a new view with the to field in
the view.
See http://www.outlook-tips.net/beginner/resetview.htm if you don't know how
to reset the view.
