I want to setup where an admin assistant for a manager can intercept Meeting
Requests on his behave to accept/reject and then place in the manager's
calendar. The manager does not want anything in his calendar until the
admin assistant reviews/accepts/rejects the meeting request. We are using
Outlook and Exch2003.

Any suggestions?

Within the managers Outlook profile, go to Tools, Options, click the
Delegates tab, add the Admin to the list of Delegates and make sure that the
bottom box that says "Send meeting requests and responses only to my
delegates, not to me" is checked.
