Adding a Input Line in a New Email

I was wondering if there is a way to add a custom input line in a new email.
For example: We use job numbers for every project we begin. Usually when we
send an email we type: Subject: WHATEVER SUBJECT IS : #0744
Is there a way to add a custom input field called PROJECT NUMBER: under the
Subject Input field. If anyone has any ideas that would be great.
