How to add task with category

I cannot find a way to add a new task and specify the category, which I used
to be able to do easily with Outlook 2003.

You mean you are now using Outlook 2007? Press the big Categorize button.

But I don't want colors ! I imported my tasks from Outlook 2003 (into 2007)
with my own categories. Now I want to add more tasks using my pre-existing
categories.

It's not much different from previous categories usage; it only adds a color
to distinguish more easily. You can still name the categories to whatever
you want it to be.
