How do I add a symbol to a number in Excel and still have the number act as a
number? i.e., 15 + 72* = 15 is what I am getting.

Click FORMAT in the menu and select CELLS and if necessary click the NUMBERS
tab.

In the Category column, scroll to the bottom of the list and select custom,
and beneath the Type field, locate the format #,##0.00 (if you want decimals)
or #,##0 for no decimals.

In the type field, to the right of the last character in the selected
formatting mask enter "*" (Quote/Asterisk/Quote) and click OK.

The numbers formatted with this custom format now display the asterisk as
the last character, but the entry remains a value.

This is a very good question.

Format > Cells... > Number > Custom > General"*"

The reason it's a good question is tht you can use the same technique to add
units to numbers:

General" lbs"
or
General" volts"
etc.
