In a small environment (ie >50 users) Is there any real advantage to
changing from the defaults or is it perfectly acceptable to just go with the
defaults.

What is the official recommendation or just your expert opinions?

Place log and DB files on separate physical disks if you don't implement
fault tolerance. If you do, then you can place them on the same partition.
Just make sure, that you have enough disk space. MS recommends at least 50Mb
for logs and 200Mb for DB, but make it at least 10 times bigger.
