I'm in need of migrating a 2000 domain that was setup as a .com to a 2003
..local domain. Will the ADMT do this without issue?

it depends!..;-)

if you will be migrating from COMPANY.COM to COMPANY.LOCAL you will still
have a problem because the first part (COMPANY) is the same and most of the
times it is the NetBIOS name of the domains. ADMT can migrate between
domains when the NetBIOS is the same

if you will be migrating from COMPANY.COM to ORGANIZATION.LOCAL then that
will ok

Jorge meant to say

ADMT can't migrate between domains when the NetBIOS names are the same.

No problem, I knew what you wanted to say. Just afraid the reader might get

Thanks for the responses. The domains will be different. My other question
would be this:

Once the migration is done and I've switched the workstations to the new
domain, will the user profiles remain? What I'm trying to avoid is all the
changes that take place on the workstations when the domain changes.

if you first migrate users and groups and then workstations (including
security and profile translation) everything will be OK

each user can login with his/her new migrated account right after its
workstation has been migrated

Forgive my ignorance, as I've never done this, but are these options in the
ADMT? In other words, migrate everything before changing the workstations,
correct?

ADMT contains tasks like:
migrating users
migrating groups
migrating computers

each task contains options that you can select/deselect when performing the
task

In addition to Jorge's answer, you can migrate any (reasonable)
PORTION of the AD (like just certain trees of OUs), and you
can migrate Users, Computers, Groups, OUs, even passwords.
