Version of Exchange?
You can't automate it, but Outlook 2007/Exchange 2007 allow you to set it
ahead of time - you could set it every morning for the evening.
FWIW, I wouldn't use it for normal outside-of-business hours. Its only
necessary to use the OOF when you are not going to be in during a normal
workday or for holidays.
