Acrobat PDFMaker 8.1 for Excel - is this standalone software or part of some
Adobe suite?

It is part of Adobe Acrobat 8.1

If she didn't purchase a maintenance agreement or update she still has
Version 8.

No.

If you want to just create PDF files, I suggest PDFCreator on SourceForge.
