When I changed back to outlook as my default email all my previous email and
folders are gone and it is wanting to set up a new account. Is there any way
to recover my emails and folders?

Sure. Just get retrieve them from your last data backup.
Also, reconfiguring Outlook never deletes your old data. It may cause
Outlook to start over with a new data file, but your old one will still be
on your hard drive unless you reformatted. Just search for Outlook data
files until you find it (*.pst -- Note: they are hidden files).
