I've had a two calendars but only use one. I right-clicked on one of them
(guess which one) under My Calendars on the tool bar and hit delete. Now I
have one calendar and it's empty. Is there anyway for me to recover the
deleted one? I have not archived for 3 months so that's not a solution.

It should be in the Deleted Items folder. Replace it back where it goes.

Did you look in the deleted item folder? Go to the folder list (Ctrl+6) so
you can see everything that is in the list easier.
