I have a consultant that I want to give access to but I want to restrict that
access only to the server that hosts a certain application. The consultant
will use the MS VPN client. How can I configure GP to allow ONLY access to
that one server for that one specific vpn user?

I can't see how this would be GP related.... why not a) restrict his user
account from accessing anything else and b) see whether you can configure
the VPN connection he uses to allow access only to a specific internal IP
address?
