Access Date/Modified Date

I am using a Windows xp prof machine, our file server is
on a Mac os x machine, when i open up any files from my
machine that live on the server, the modified date always
changes to the current date, even though i do not make any
changes. This also happens to other users when they access
file from their machines(mostly xp pro, a few 2000), why
does this happen, does anyone know? It makes it very
difficult in tracking documents through time.
