When I assing a task, and the task is accepted, I receive an email
indicating the task is accepted. When I view the task in the task
folder the task indicates "waiting for response". ???

Mark the receipt as read and delete it and the response will get processed.

I marked them read and deleted the message. The task header reads
"waiting for response for recipient". Maybe I missed something.

What mail account type are you using?
Is the received response a special response item or just a basic email? You
can see the difference in the message icon.
