2003 & exchange 2007 folders created dissapear

Outlook 2003
Windows 2003 using Roaming profiles

This has happened on several occasions now, a user creates a folder in there
inbox copies some email into it and then at a later date/time uses another
machine logs on checks email folder does not exist, emails are lost.

anyone know why, are they recoverable
